About this role
Under the direction of a Plant Manager, prepares and seasons meat. Utilize wood-burning pit and rotisserie smokers to smoke high quality meats.
ESSENTIAL DUTIES AND RESPONSIBILITIES
- Demonstrates the ability to prepare all smoked meat items to Southside Markets time and temperature standards.
- Demonstrates ability to place meat on the pit in the appropriate place for appropriate cooking.
- Demonstrates ability to tell on feel and look alone if a brisket is ready to come off the pit.
- Demonstrates ability to interpret, use and follow all Southside Market Pit Tools, including but not limited to the drop sheets, par sheets, and waste logs.
- Able to articulate a general and basic knowledge of all the meats we serve.
- Demonstrates ability to effectively clean all pits, rotisseries, and flats to prevent pit fires.
- Keeps meat cooler maintained, cleaned, and organized.
- Demonstrates ability to build the appropriate fire for each fire box, including wood stacking and ignition.
- Demonstrates ability to maintain fire boxes throughout the day to ensure proper cooking temps.
- Follow all Southside Market & Barbeque recipes and season all meats to Southside standards.
- Prepares and stocks seasoned meats for production.
- Maintains cleanliness and organization of pit area.
- Observes safety and security standards.
- Shows the ability to properly fill out HACCP documents in a timely manner

Qualifications
QUALIFICATIONS
Education and/or Experience
Food Handler Certificate required.
Prior BBQ cooking experience highly preferred.
Language Skills
Ability to read, write and speak fluently in English for all job-related circumstances.
Mathematical Skills
Ability to add, subtract, multiply, and divide in all units of measure, using whole numbers, common fractions, and decimals.
Physical Demands
While performing the duties of this job, he/she is frequently required to stand, walk, use hands and fingers to handle and feel, talk and hear. He/she is regularly required to reach with hands and arms. He/she must often lift and/or move up to 80 pounds.
Work Environment
The noise level in the work environment is usually moderate to loud.
The ambient temperature of the pit area is higher than the other departments due to the proximity of the wood burning fires.
