CHIEF STEWARD

Sandy Lane, an exclusive AAA Five Diamond, Forbes Five Star exclusive resort and a member of Leading Hotels of the World, is seeking to recruit a Chief Steward for our Stewarding Department.

The Role

The Chief Steward will report to the Executive Chief Steward and will be responsible for  assisting the department head with ensuring that there is an adequate amount of all F&B operating equipment and available for all service operations.

Key Responsibilities:

- Supervising set ups and breakdowns at various functions if necessary.

- Assisting with ensuring that catering services are performed to required standard.

- Assist with the overall management of the Stewarding Department, ensuring compliance with all Game Plan Standards

- Ensuring that all sanitation standards are maintained

- Assist the Executive Chief  with the management and control of Operating Supplies and Equipment (OS & E ); ensuring adequate tableware is available for functions and restaurants.

- Ensure cleaning schedule programmed is adhered to, supervising monthly OS&E inventory in absence of Stewarding Manager.

- To assist in the recruitment, training, directing and discipline of stewarding personnel.

- Check all associates for cleanliness, appearance and proper uniform.

- Conduct pre-function meetings and roll call.

- Check all stations before, during and after shift to ensure compliance with side duty responsibility and at the required standard

- To measure employee performance and their daily task and to ensure all are done.

- To ensure adequate staffing for each area on a weekly basis.

- Control chemical cost consumption as per budget and keep a check on chemical usages

- In absence of Manager to co-operate with engineering department and maintain communications with the trash removal company.

- In the absence of the Stewarding Manager, to co-ordinate and supervise catering, including transporting, food set up and dishwashing.

- Inspect all back of house food service areas for cleanliness and report any equipment irregularities / failures.

Our preferred candidate must possess:

- A good secondary education with passes in CXC English Language and Mathematics

- Three years’ experience in a similar position preferably in a hotel environment one of which should be in a supervisory position

- Good customer service, interpersonal, organizational and time management skills along with the ability to prioritize

- Good communication skills with both internal and external guests.

- Ability to anticipate needs and be flexible in meeting request

- Ability to remain calm, objective and courteous under pressure and in stressful situations

The successful candidate must be in excellent physical condition to perform extensive walking, bending, lifting and stretching. It is a requirement that the candidate must have a flexible working style as long hours are required from time to time.
