Head Chef | Galway Hooker

The Galway Hooker Irish Pub is looking for an experienced and hands-on Head Chef to lead our kitchen team and take ownership of the day-to-day kitchen operation.

Located on The Esplanade, just moments from Scarborough Beach, The Galway Hooker is a lively Irish-style pub with a strong local following. We’re known for traditional Irish and pub-style food, Guinness, live music, sport, quiz nights and regular food specials.

We’re looking for a Head Chef who enjoys being hands-on, knows how to lead a team and can deliver great food consistently across busy services.

What you’ll be doing:

- Lead and develop the kitchen team
- Take ownership of the day-to-day kitchen operation
- Plan and manage preparation and service
- Maintain food quality, consistency and presentation
- Manage ordering, stock control, stocktakes and wastage
- Monitor food costs and kitchen budgets
- Develop and maintain kitchen procedures and standards
- Manage food safety, hygiene and compliance
- Train and support the kitchen team
- Work closely with the Venue Manager and wider leadership team
- Be hands-on and lead by example during service

What we’re looking for:

- Minimum 2 years’ experience as a Head Chef
- Strong background in Irish, European or quality pub-style cooking
- Proven experience leading and developing a kitchen team
- Strong time management and organisational skills
- Hands-on approach and willingness to get involved in every part of the kitchen
- Calm and confident under pressure
- Strong understanding of food safety, stock control and kitchen costs
- Reliable, proactive and able to take ownership
