Position Summary:
The PM Backline Cook is responsible for executing refined, seasonally driven cuisine with precision and consistency while upholding the Executive Chefs standards of quality, integrity, sanitation, and professionalism. This role requires technical skill, discipline, and a commitment to excellence in a luxury fine dining environment. The PM Backline Cook works in close collaboration with the Chef de Cuisine and Sous Chef team to deliver an exceptional culinary experience reflective of the restaurants elevated standards.

Essential Responsibilities:
Execute menu items with meticulous attention to detail, technique, and presentation. Maintain a clean, organized, and service-ready station at all times. Follow recipes, plating guides, and culinary direction with accuracy and consistency. Demonstrate strong foundational cooking techniques and the ability to refine skills through instruction and repetition. Uphold the highest standards of food safety, sanitation, and product handling. Assist in all areas of kitchen operations including breakfast, lunch, dinner service, butchery, product receiving, storage, and inventory rotation. Communicate clearly and professionally with all culinary team members. Contribute to a culture of accountability, mutual respect, and continuous improvement. Perform effectively during high-volume and high-expectation service periods.

Physical Requirements:
Ability to lift a minimum of 50 pounds during a shift. Ability to stand and walk for extended periods. Ability to work in a hot, demanding kitchen environment.

Qualifications

Education:

High school or equivalent education required

Experience:

One to two years kitchen experience preferred

Licenses or Certificates:

Ability to obtain and/or maintain any government required licenses, certificates or permits.

Grooming:

All employees must maintain a neat, clean and well-groomed appearance per The Umstead Hotel standards.
