About the Role:
The Manager, Field Finance owns the labor model across all Din Tai Fung restaurants and leads finance partnerships for new-region expansion and an assigned existing market. Reporting to the Sr. Manager, Field Finance, the role partners with Regional Leadership, Executive Kitchen Managers, General Managers, and People & Culture to keep labor standards current, support new regions with sales and labor ramp modeling, and drive sales and labor productivity in the assigned market. Working alongside FP&A to provide operational color and commentary on controllable expenses for its markets.
Responsibilities:
- Labor Model Ownership — All Restaurants — Support the ongoing build of the restaurant labor model and serve as its owner going forward. Maintain labor standards and drivers across all restaurants as menu, hours of operation, and formats change, and maintain the HotSchedules and Toast POS integration. Report on labor productivity (CPLH, overtime, premium pay) and schedule adherence to the model. Partner with Operations and People & Culture on labor model changes, trainee / new-hire ramp assumptions, and wage rate planning.
- New Region Expansion Partnership — Lead finance partnership for new regions as Din Tai Fung expands, including East Coast markets. Build sales ramp curves and labor / staffing ramp models for new restaurants, track post-opening performance against ramp expectations, surface variances early, and incorporate learnings into future opening models. Establish period review routines and reporting with new-region leadership. (Capex and pre-opening cost ownership sit outside this role.)
- Existing Market Business Partnership — Serve as the embedded finance partner for an assigned existing market. Lead period business reviews with Regional Directors and Area Managers, coach GMs on reading their P&L, and quantify the financial impact of operational decisions (staffing models, menu mix, hours of operation, R&M spend). Translate financial results into clear, operator-friendly narratives and action items.
- Field Finance Ad-hoc Analysis & Projects — Lead ad-hoc analyses and projects supporting field operations, such as restaurant and regional performance deep-dives, daypart and channel performance, staffing and operating-hours decisions, and other questions raised by Field Finance and Operations leadership. Build durable models and templates that can be reused across the field finance function.
- Annual Budget & Forecast — Build restaurant-level annual budgets and rolling forecasts for sales and labor for new regions and the assigned market in coordination with FP&A, and provide labor model–based assumptions for all restaurants. Develop bottom-up assumptions on traffic, check, hourly wages, and controllable costs; partner with Operations on commitments and risk / opportunity calls.
- Period Close Support — Controllable Expense Commentary — Partner with FP&A to provide operational color on controllable expense variances for new regions and the assigned market. Investigate restaurant-level drivers behind labor, food, paper, supplies, and R&M variances, validate explanations with Operations, and ensure period reporting reflects the operating reality in the restaurants.
Job Requirements:
- Bachelor's degree in Finance, Accounting, Economics, Business Administration, or related field
- 6+ years of progressive finance / FP&A experience, with at least 3 years supporting multi-unit operations (restaurant, retail, hospitality, or similar)
- Experience building or maintaining labor models or labor standards in a multi-unit environment
- Strong multi-unit P&L fluency: comparable sales, food & paper, labor (SPLH, hours), prime cost, four-wall margin
- Advanced Excel skills (complex formulas, INDEX/MATCH or XLOOKUP, pivot tables, sensitivity analysis) and demonstrated experience building structured financial models
- Demonstrated experience leading cross-functional projects and presenting to senior leadership
- Demonstrated ability to translate financial data into clear narratives for non-finance partners
- Self-directed with strong project management skills; able to balance period-end deadlines with longer-term initiatives
Preferred Requirements:
- Experience in a high-growth restaurant operator or multi-unit hospitality environment
- Working knowledge of fiscal-period (13-period / 4-4-5) accounting and Same Store Sales methodology
- Familiarity with Toast POS, HotSchedules / Fourth, and BI tools (Power BI, Tableau, or Looker)
- SQL or Power Query for self-service data extraction from data warehouse environments (BigQuery a plus)
- Exposure to new-unit sales and labor ramp modeling
- MBA, CPA, CMA, or CFA progress / completion
Essential Functions:
- Build and maintain the restaurant labor model, restaurant-level sales and labor models, and reporting packages
- Communicate financial results to Operations leadership in writing and live presentation
- Collaborate cross-functionally with FP&A, Accounting, Operations, People & Culture, and IT
- Operate Excel, PowerPoint, BI tools, and the company POS / workforce management reporting environments
- Travel to restaurants for on-site restaurant reviews and operations partnership
Special Requirements:
- Approximately 10–15% travel expected, primarily to Din Tai Fung restaurants across California and the broader West and East Coast markets as the portfolio expands. Occasional evening or weekend availability around period-end close.
