The starting pay range for this position begins at $17/hour and is based on the level of qualifications and relevant experience above the minimum requirements.

Reserve : A flexible, on-call position scheduled based on business needs and operational volume. Reserve employees typically work anywhere from 40-999 hours per year, depending on demand.

The Wine Bar Prep Cook is primarily responsible for the preparation of food products for use in menu items that represent Biltmore’s standards for Wine Bar food services. Prep Cook is also responsible for proper receiving, storage, and rotation of product; responsible for collecting, washing, distributing, and storing all dishes, glasses, flatware, and utensils, and will maintain all aspects of kitchen sanitation. The success of this position will be measured by guest satisfaction, cleanliness, organization, product quality, consistency and timeliness of service. Assembly and healthy maintenance of all food products will be required, while keeping in line with ServSafe Standards. The Wine Bar Prep Cook provides general assistance and support to the department, leadership, and the company as required.

Essential Job Duties:

1.. Maintain a clean working environment, where sanitation, health and safety standards are never compromised; maintain ServSafe Standards. 
2. Prepare food and ingredients for use in menu items and drink specials.
3. Consistently keep the Wine Bar stocked with clean glasses, and clear of dirty glasses; washing and storing all dishes, glassware and silverware properly.
4. Double check daily forecasts in order to prepare and set-up properly for each day.
5. Accountable for proper rotation, storage and dating of all food items; check all food items daily for quality and freshness.
6. Ensure all items are properly prepared, sliced/cut, garnished, and consistently presented to Biltmore’s quality standards.
7. Ensure all equipment is properly cleaned, maintained and in safe, good working order.
8. Empty all garbage and clean cans when needed.
9. Prepare and plan in advance to ensure everything needed for next shift is ready for the following day.
10. Clean sink and pots area after every shift.
11. Clean and organize all stations, coolers, and walk-ins for next shift.
12. Required to maintain floor cleanliness through consistent mopping and sweeping of floors.  
13. Responsible for routine cleaning of dish machine.
14. Work with the Winery Stockroom Team on receiving and storing items from delivery trucks, and ensuring proper storage and rotation of product.

Qualifications:

1. Previous experience with food preparation in a full-service restaurant strongly preferred. Culinary certification(s) and/or training helpful.
2. Basic math, knife handling, and food preparation skills.
3. Knowledge of food sanitation procedures. ServSafe certification preferred.
4. Ability to read and execute recipes.
5. Able to work effectively with or without direct supervision.
6. Strong time management and organizational skills.
7. Ability to be proactive, exercise good judgment, and take initiative where needed.
8. Demonstrated commitment to providing world class guest service and stellar experiences.
9. Ability to be professional in both appearance and demeanor at all times.

Physical Requirements:

1. Able to sit, stand, twist, bend, push, pull, walk, and lift up to 50 pounds on a regular basis for periods of up to 10 hours a day.
2. Able to work effectively in a kitchen environment with fluctuations in temperature and conditions (heat, cold, humidity) for an extended period of time.
3. Requires walking or standing to a significant degree.
