Job Description:
This position is responsible for planning and directing the overall F&B operations of the property, including all related management functions to ensure a positive guest experience.
Essential duties include, but are not limited to:
• Conducts themselves in accordance with all Gaming Commission Regulations, and Seminole Tribe of Florida/departmental policies and procedures
• Develops and administers operating and capital budgets
• Conducts or reviews detailed management and operational analyses to ensure ongoing success and efficiency within the department
• Responsible for specifications and quality of all food products
• Controls all labor and food cost percentages
• Responsible for quality, consistency, and presentation of all food products delivered to guests
• Recommends to senior management operational enhancements that support initiatives and promote excellence
• Monitors profit and loss statements to ensure objectives are met, and recommends corrective actions as required
• Performs all employee management functions such as interviewing, hiring, training, etc
• Provides strategic leadership and direction for all food and beverage outlets, culinary operations, banquets, catering, beverage operations, and related support functions
• Develops and executes short- and long-term food and beverage strategies aligned with property goals, brand standards, and guest expectations
• Establishes performance goals and key operating metrics; evaluates results and implements action plans to improve revenue, profitability, service, and productivity
• Identifies revenue-generating opportunities through menu development, pricing strategy, promotions, special events, and outlet optimization
• Ensures compliance with all applicable health, sanitation, food safety, alcohol service, gaming, licensing, and workplace safety requirements
• Oversees vendor relationships, contract negotiations, purchasing strategies, inventory controls, and product standards to support quality and cost objectives
• Partners with Finance, Marketing, Human Resources, Security, Facilities, and other departments to coordinate initiatives and support property-wide objectives
• Leads, develops, and holds accountable the food and beverage leadership team through succession planning, performance management, coaching, and professional development
• Establishes service standards and guest recovery practices; reviews guest feedback and operational trends to drive continuous improvement
• Evaluates concepts, capital projects, renovations, equipment needs, and technology investments and provides recommendations to senior leadership
• Maintains awareness of industry trends, competitive offerings, and emerging practices and incorporates relevant innovations into the operation
• Other duties as assigned
Qualifications:
• Requires a BS/BA degree in related field, and at least ten (10) years of related experience, or an equivalent combination of education and experience
• Proficient knowledge of software programs such as Microsoft Excel and Microsoft Word
• Must be able to read, understand and explain to employees technical manuals and other related materials required for proper completion of goals
• Must be able to effectively communicate with guests regarding complaints, tours, programs, etc
• Must be able to effectively coach and counsel employees
• Must be able to complete standard Seminole Tribe of Florida forms and reports
• Must be able to communicate effectively with guests in English, specific to position duties and responsibilities
• Must present an image of excitement, enthusiasm, and outgoing personality, while being able to project a professional appearance
• Commitment to routinely go above and beyond in the accomplishment of position responsibilities in an effort to play a role in the achievement of organizational goals
• Ability to deliver a service level which creates an atmosphere that makes our guests want to return, giving each guest a positive, memorable entertainment experience
Work Environment:
• Duties and responsibilities are typically performed in a professional office setting, but there may be times where you will need to be on the Casino Floor or pass through this area. On the Casino Floor, you may be exposed to casino-related environmental factors including, but not limited to, second hand smoke and excessive noise.
• While performing the duties of this job, the employee is frequently required to stand; walk; use hands to finger, handle, or feel; reach with hands and arms, talk or hear; and taste or smell. The employee must frequently lift and/or move up to 50 pounds. Specific vision abilities required by this job include close, distance, color, and peripheral vision, depth perception and ability to adjust focus.
