General Summary :
At Leprino Foods, starting compensation for this role - Cheese L2 Starter Room Rate is $27.59 (Break in rates and $0.75 cents differential pay from 6PM - 5:59AM applies). This operator is responsible for providing good quality bulk starter for the cheese making process for the Cheese Department.
JOB DESCRIPTION
- Document any operational change during production and anything out of the ordinary, in the comment section of MES as well as any required data into the MES system.
- Prepare R/C cultures for inoculation.
- Perform starter activity tests and pull required samples at the correct intervals.
- Acquire a California Pasteurization License.
- Prepare RC media and TMS media.
- Maintain the silo and HTST charts as required for legal documentation.
- Practice inventory control by maintaining an adequate supply of quality starter to the vats without producing excess.
- Maintain equipment including, but not limited to, homogenizers, pumps, HTST press, and valves.
- Adhere to all Company and regulatory GMPs.
- Communicate between, co-workers, departments and supervision as required.
- Must successfully complete JTPR and consistently perform work according to SOP.
- At all times, operate in a manner consistent with safe operating procedures.
- Responsible for providing good quality bulk starter for the cheese making process in accordance with Company Standard Operating Procedures (SOP).
- Maintain the Master Sanitation schedule. Ensure data is accurate and up to date.
- Perform other duties as assigned.
Required Knowledge, Skills & Abilities :
- Knowledge of sanitary GMPs.
- Physical requirements to perform job as defined in the essential job function.
- Must be able to exercise judgment and make decisions.
- Computer literacy.
- Obtain Pasteurizer License.
- Autonomous, able to work with minimal oversight.
- High level of risk assessment and troubleshooting.
- Analytical, math skills, documentation.
- High attention to detail and consistency.
