The Club at Crested Butte , located in Crested Butte, CO , is pleased to announce an excellent career opportunity for a Full-Tim e Executive Sous Chef ! We are seeking a driven individual who is eager to learn, contribute, and grow within a fast-paced hospitality-focused property organization. Salary Range: $70,000 to $75,000 per year (Depending on Experience)
General Purpose:
The Executive Sous-Chef is responsible for the supervision and direction of all back of the house food operations. This position will embody The Club at Crested Buttes standards of service and member experience. The Executive Sous-Chef will ensure that all service is conducted and fulfilled in a manner consistent with the goals and objectives of the Food & Beverage Department.
Essential Duties:
- Oversee all food production operations at the facility and ensure the production of consistently high-quality food for all the restaurant outlets.
- Cook on the line and prep during service, as necessary.
- Screen, interview, and hire back-of-house staff.
- Schedule and coordinate the work of the back-of-house staff to ensure that staffing is within budgeted labor cost goals.
- Evaluate job performance of back-of-house staff. Correct, reward, and discipline staff in a fair manner aligned with the Companys disciplinary procedures.
- Safeguard all back of house employees by implementing training to increase their knowledge about safety, sanitation, and accident-prevention principles.
- Ensure that effective orientation and training are given to each new associate. Develops ongoing training programs.
- Monitor food safety and quality such as, but not limited to temperatures, line audits, walk-in and freezer logs, and labels.
- Ensure that high standards of sanitation, cleanliness, and safety are always maintained throughout all back of house areas.
- Maintain MSDS Binders in all food outlets.
- Monitors to ensure proper receiving, storage (including temperature setting) and rotation of food products so as to comply with Health Department regulations.
- Establish and maintain a regular cleaning and maintenance schedule.
- Identify, communicate, and coordinate any equipment repairs, scheduled maintenance, and capital projects.
- Establish controls to minimize waste and theft.
- Consult with the Executive Chef about menu planning and beverage production aspects of special events.
- Assist the Executive Chef in preparing necessary data for applicable parts of the budget; project annual food and beverage, labor, and other costs and monitor actual financial results; take corrective action as necessary to help assure that financial goals are met.
- Attend food and beverage staff and management meetings.
- Develop policies and procedures to enhance and measure quality; continually update written policies and procedures to reflect state-of-the-art techniques, equipment, and terminology.
- Maintain physical presence during times of high business volume.
- Manage multiple outlets.
- Perform other duties as required.
Physical Demands:
- Physical activity includes long periods (6-8 hours) of standing, walking, reaching, bending, and scooping.
- Regularly lifts up to 25 pounds and occasionally lifts up to 50 pounds.
- Noise level is typically moderate to loud.
- Occasionally works in wet or humid conditions (non-weather); may encounter toxic or caustic chemicals. Occasionally works in extreme cold or heat (non-weather); may work in outdoor weather conditions.
Education/Experience:
- High School or equivalent required.
- Associates degree (AA) or equivalent from two-year college or technical school; or six months to one-year related experience and/or training; or equivalent combination of education and experience.
- Private Country Club experience preferred but not required.
Certificates/License:
- Food Safety/ServSafe and Applicable Sanitation Training.
Work Requirements:
- Ability to work extended hours during golf and holiday seasons.
- Ability to work nights, weekends, and holidays as required.
- Strong administrative skills and proficiency in Microsoft Office Suite.
- Possesses high ethical standards.
- Strong communication and organizational skills.
