Position Summary
The Lead Saut Cook oversees saut station operations while preparing high-quality menu items to established recipes and presentation standards. This role provides leadership to the culinary team, ensures efficient service, maintains food quality and safety standards, and assists with training and development of kitchen staff.
Key Responsibilities
- Lead daily saut station operations and support kitchen staff during service.
- Prepare proteins, vegetables, sauces, pasta, and specialty dishes according to recipes and chef specifications.
- Ensure food quality, consistency, portion control, and presentation standards are met.
- Coordinate ticket flow and communicate effectively with the Chef, Expo, and line staff.
- Train, mentor, and support cooks as needed.
- Maintain proper food storage, labeling, dating, and rotation (FIFO).
- Ensure compliance with food safety, sanitation, and temperature-control standards.
- Monitor product quality, inventory levels, and kitchen organization.
- Assist with prep, specials, banquets, and other culinary operations.
- Help control food waste and support cost-conscious kitchen practices.
- Maintain a clean, organized, and service-ready workstation.
- Perform other duties as assigned by culinary leadership.
Qualifications
- 3+ years of professional cooking experience, including significant saut experience.
- Previous lead cook or supervisory experience preferred.
- Strong knowledge of saut techniques, sauces, temperature control, and food safety.
- Strong leadership, communication, and organizational skills.
- Ability to perform efficiently in a fast-paced, high-volume environment.
Certifications
- Current ServSafe Food Handler certification (or equivalent) required.
- Alcohol certification (RBS or equivalent) as required by local regulations.
