About the role

Work Location Brisbane

The RD&A Senior Technologist develops and applies meat and poultry solutions for Kerry ANZ customers. The role brings specialist knowledge of marinades and coating systems (or a closely related background) across formulation, product testing, application development and customer trials.

You will work directly with customers, including meat processors and foodservice and quick service restaurant (QSR) businesses, to develop new meat concepts, optimise existing products and create customised solutions that deliver on taste, texture, functionality and nutrition. You will be part of a collaborative RD&A team with access to a global network of chefs, marketing and sensory experts, and you will deliver within agreed launch timescales.

Key responsibilities

- Lead meat and poultry product development from customer brief through to launch, working with RD&A Managers, commercial, process engineering, quality, suppliers and manufacturing.
- Develop and apply coating systems (predusts, batters and breaders) across poultry, meat and non-meat applications.
- Develop meat marinades, glazes and seasonings, and functional meat ingredients for poultry, meat and non-meat applications.
- Apply specialist knowledge of meat science, formulation and food application to develop and optimise products.
- Plan and run bench trials, pilot plant trials, customer trials and the first productions of new recipes, including on customer and manufacturing sites.
- Work with customers and commercial teams to understand requirements, present results and develop customised meat and poultry solutions.
- Contribute to cost-competitive and commercially viable products, and support Profit Improvement Project (PIP) and Design to Value opportunities across raw materials and finished products.
- Work with RD&A, commercial, quality, regulatory, manufacturing, suppliers and other technical teams to resolve product and application challenges.
- Meet food safety, quality and labelling requirements, including shelf-life testing and technical documentation.
- Maintain appropriate laboratory practices, technical documentation and product development records.

Qualifications and skills

Essential

- Bachelor’s or higher degree in Food Science or a related field.
- Hands-on food product development experience in meat marinades, coating systems (predust, batter, breading) or a closely related protein or coated product application.
- Working knowledge of meat formulation and functional ingredients, and how they perform in processing.
- Experience running product testing, scale-up and customer or factory trials, and taking products through to commercialisation.
- Experience working with cross-functional teams and managing multiple projects at once.
- Analytical and problem-solving skills, with the ability to apply creative thinking to product development.
- Strong communication and interpersonal skills and a customer-focused approach.
- Ability to work independently and collaboratively within a team.

Desirable

- Experience across both marinades and coating systems.
- Experience with glazes, drum or tumble application systems, or fish and seafood applications.
- Exposure to QSR or foodservice customers and to meat processor production environments.
- Experience delivering cost-reduction reformulations while holding quality and functionality.
- Sensory evaluation experience.
