CoCo Key Hotel & Water Resort Orlando is seeking an energetic and hands-on Assistant Food & Beverage Manager to support the daily operations of our food and beverage outlets, including restaurants, bars, quick-service locations, and resort amenities.

The Assistant Food & Beverage Manager will assist in leading the Food & Beverage team, ensuring exceptional guest service, maintaining operational standards, controlling costs, and supporting a positive and productive work environment. This position is highly visible and requires a strong hospitality mindset, leadership skills, and the ability to work effectively in a fast-paced resort environment.

Key Responsibilities:

- Assist with the daily operation and supervision of all assigned Food & Beverage outlets.

- Lead, coach, and motivate Food & Beverage team members to deliver exceptional guest service.

- Ensure outlets are properly staffed and operationally prepared for daily business.

- Monitor service standards, food quality, cleanliness, presentation, and overall guest experience.

- Assist with scheduling, staffing levels, breaks, and shift assignments based on business needs.

- Conduct pre-shift meetings and communicate daily priorities, promotions, events, and operational updates.

- Monitor employee performance and provide coaching, feedback, and recognition as appropriate.

- Assist with training and onboarding of new Food & Beverage employees.

- Ensure compliance with company policies, health and safety regulations, ServSafe standards, and applicable food and beverage regulations.

- Monitor inventory levels and assist with ordering, receiving, storage, and proper rotation of food, beverages, and supplies.

- Help control food, beverage, labor, and operating costs while maintaining quality and service standards.

- Review cash handling, credit card transactions, discounts, voids, comps, and other financial controls.

- Assist with daily opening and closing procedures and ensure proper completion of required checklists and documentation.

- Address guest concerns promptly and professionally and take appropriate action to resolve service issues.

- Work closely with other departments, including Front Office, Housekeeping, Engineering, Waterpark Operations, Sales, and Events, to support overall resort operations.

- Assist with banquet and special event food and beverage operations as needed.

- Ensure all outlets maintain appropriate cleanliness, organization, appearance, and sanitation standards.

- Monitor equipment and facility conditions and communicate maintenance needs promptly.

- Support implementation of menus, promotions, special events, and other Food & Beverage initiatives.

- Assist management with reviewing sales, labor, guest feedback, and other operational performance indicators.

- Maintain a visible management presence throughout assigned outlets and shifts.

- Perform other duties and responsibilities as assigned by management.

Qualifications

- Previous supervisory or management experience in a hotel, resort, restaurant, banquet, or high-volume Food & Beverage environment.

- 2+ years of Food & Beverage or hospitality experience preferred.

- Strong knowledge of restaurant and food service operations.

- Previous experience leading and developing a team.

- Strong customer service and conflict-resolution skills.

- Ability to manage multiple priorities in a fast-paced environment.

- Strong organizational and communication skills.

- Basic understanding of labor, inventory, and cost-control practices.

- ServSafe certification preferred or ability to obtain certification.

- TIPS or responsible alcohol service certification preferred where applicable.

- Must be able to work a flexible schedule, including weekends, holidays, evenings, and special events.
