Position Summary

The Beverage Manager is responsible for the overall management, performance, and guest experience of the hotels beverage operations across multiple bars and outlets. This position provides leadership and direction to bar managers, bartenders, servers, and beverage support teams while ensuring consistent service standards, beverage quality, financial performance, and compliance across all outlets.

The Beverage Manager will develop and execute a comprehensive beverage program that reflects the hotels brand and guest profile while driving revenue, profitability, innovation, and operational excellence.

Key Responsibilities

Beverage Operations

- Oversee the daily operations of all hotel bars and beverage outlets, ensuring consistent standards across each venue.

- Establish and maintain beverage service standards, recipes, presentation guidelines, and operating procedures.

- Ensure each outlet delivers a high-quality, efficient, and memorable guest experience.

- Collaborate with outlet managers and Food & Beverage leadership to coordinate staffing, service flow, promotions, and operational priorities.

- Conduct regular outlet inspections and service observations to identify opportunities for improvement.

- Support the opening and closing procedures of beverage outlets as needed.

- Ensure all bars are properly stocked, organized, clean, and operational.

Beverage Program Development

- Develop and maintain the hotels cocktail, wine, beer, spirits, non-alcoholic, and specialty beverage programs.

- Create and maintain standardized recipes, specifications, costing, and presentation standards.

- Develop seasonal and signature cocktail programs that align with the hotels positioning and guest expectations.

- Evaluate beverage trends and introduce new products and concepts when appropriate.

- Work closely with culinary leadership to develop beverage pairings and collaborative menu offerings.

- Maintain consistency of beverage offerings while allowing individual outlets to retain their own identity where appropriate.

Financial & Inventory Management

- Take ownership of beverage revenue, cost of sales, and profitability across all outlets.

- Establish and monitor beverage cost targets and take corrective action when performance is outside established goals.

- Manage beverage purchasing, inventory levels, par stocks, and product rotation.

- Conduct and oversee regular physical inventories and investigate variances.

- Analyze sales reports, product mix, beverage costs, and outlet performance to identify opportunities for increased profitability.

- Negotiate with vendors and maintain strong supplier relationships while ensuring competitive pricing and product quality.

- Minimize waste, breakage, over-pouring, spoilage, and unauthorized product usage.

- Assist with annual budgeting, forecasting, and capital planning for beverage operations.

Leadership & Team Development

- Recruit, train, coach, and develop beverage leadership and service teams.

- Establish clear performance expectations and hold team members accountable to hotel standards.

- Conduct regular training on cocktails, spirits, wine, beer, service techniques, product knowledge, and responsible alcohol service.

- Develop and maintain training materials and beverage education programs.

- Identify high-potential employees and support their professional development and career progression.

- Promote a positive, professional, inclusive, and service-oriented workplace culture.

- Partner with Human Resources and F&B leadership regarding performance management, scheduling, and employee relations.

Guest Experience

- Maintain a strong presence throughout the hotels beverage outlets and interact regularly with guests.

- Respond professionally to guest feedback and resolve service issues promptly.

- Monitor guest satisfaction and identify opportunities to improve the overall beverage experience.

- Ensure beverage service reflects the hotels brand standards and level of service.

- Support VIP, group, banquet, and special-event beverage requirements.

Compliance & Safety

- Ensure compliance with all applicable federal, state, and local laws and regulations governing alcohol service.

- Maintain strict standards for responsible alcohol service and age verification.

- Ensure compliance with health, sanitation, food safety, workplace safety, and hotel policies.

- Maintain proper licensing, permits, documentation, and required operational records.

- Ensure proper handling, storage, and security of alcoholic beverages and related products.

Events & Special Programs

- Oversee beverage operations for hotel events, weddings, meetings, celebrations, activations, and special programming.

- Develop beverage packages, specialty menus, and pricing in partnership with Catering and Events teams.

- Coordinate staffing, product requirements, setup, service, and breakdown for large-scale events.

- Support hotel-wide promotions and revenue-generating beverage initiatives.

Leadership Expectations

The Beverage Manager is expected to be a visible and hands-on leader who sets the standard for professionalism, hospitality, product knowledge, and operational discipline. The position requires the ability to balance guest experience, team leadership, creativity, and financial accountability across multiple outlets simultaneously.

Qualifications

- 3–5+ years of progressive beverage management experience, preferably within a luxury, lifestyle, resort, or high-volume hotel environment.

- Previous experience overseeing multiple bars, outlets, or beverage concepts strongly preferred.

- Strong knowledge of spirits, cocktails, wine, beer, and non-alcoholic beverages.

- Demonstrated experience with beverage costing, inventory control, purchasing, and financial analysis.

- Proven ability to lead, coach, and develop a diverse hospitality team.

- Strong communication, organization, and problem-solving skills.

- Experience with POS, inventory management, scheduling, and hotel/F&B operating systems.

- Knowledge of responsible alcohol service and applicable local regulations.

- Ability to work flexible hours, including evenings, weekends, and holidays.

- Ability to remain calm and effective in a high-volume, fast-paced hospitality environment.

Preferred Qualifications

- Experience in a luxury hotel, resort, or multi-outlet hospitality environment.

- Advanced beverage certifications or education such as WSET, CMS, BarSmarts, or equivalent.

- Experience developing cocktail programs and beverage concepts.

- Experience managing high-volume bars and large-scale events.

- Strong vendor and supplier relationships.

- Experience with opening new outlets or launching new beverage programs.
