Kepak St. Merryn in Merthyr Tydfil has combined beef and lamb processing and packing facilities. We offer beef and lamb products ranging from retail ready cuts for butchers’ counters to branded packaged meat, all as part of our service; raised on open pastures, sourced from local farmers and hand-selected by our master butchers, we produce beef and lamb products with integrity and unmatched quality assurance.

We are currently recruiting for Meat Trimmers to work in our busy Retail Department at Kepak, Merthyr Tydfil. This is a full time, permanent position working 3 days on/3 days off - 6.00am to 6.30pm.

Role Description:

To support the Raw Materials Quality Assessor by identifying, correcting, and preventing raw material specification deviations through real-time trimming, inspection.

The role acts as a key operational link between quality and production, ensuring incoming materials meet specification requirements before entering the retail packing process.

You will be removing excess fat, gristle, sinew, blood clots, bruising and other defects from the meat before it enters the Retail team. The meat will then need to be weighed and visually checked it is all up to our customer specifications.

Being able to work with raw meat and within a cold environment is essential.

Requirements

Responsibilities:

- Conduct detailed assessment of incoming raw materials alongside the Raw Materials Quality Assessor.
- Remove excess fat, gristle, cartilage, glands, bruising, bone fragments, blood clots, contamination, and other specification defects as required.
- Identify specification deviations and immediately communicate findings to the Raw Materials Quality Assessor.
- Support real-time Just-in-Time inspections prior to product entering production.
- Assist with enhanced inspections following supplier NCRs or recurring quality concerns.
- Assess incoming material against product specifications, visual standards, and customer requirements.
- Ensure all trimming activities are completed in a hygienic and controlled manner.
- Accurately record quantities of trim, waste, and non-compliant material to support cost recovery activities.
- Monitor raw material quality and identify emerging trends or deterioration in standards to the Raw Material Assessor.
