About this role

PURPOSE

Responsible for taking orders and serving Food and Beverages to Members and Guests in all areas of the Club (Restaurants, Bars, Club Rooms, Cottages, Beach Service, Pool Side and Cabanas) and is responsible for removing and cleaning all items after. To provide efficient and professional service to Members and Guests.

QUALIFICATION STANDARDS

Education and Experience:

- High school graduate or its equivalent.

- Experience in a hotel or related field.

General Requirements:

Physical Requirements:

- May occasionally lift heavy objects.

- Must be able to carry food and beverages on trays as per standard.

- Must be able to walk confidently/comfortable in the sand.

- Ability to stand and walk moderate to long distances throughout the shift.

- Ability to work outside in varying weather conditions.

- Must be able to walk the beach to constantly check on Members needs.

- Hours vary according to season, occupancy levels of the Club and private dining/special themed events. These are the general guidelines of daily shifts.

DUTIES and RESPONSIBILITIES

- Set up and stock assigned workstation/area.

- Polishing of glassware, silverware and chinaware.

- Assist with running Food and Beverage clearing food and beverage items.

- Replenish supply of linen at the beginning of the shift.

- Refill salt and pepper shakers as per daily assignment.

- Coffee station restocked with clean coffee cups and saucers, tea and coffee pots, creamers and sugar dishes.

- Set up bread baskets and butter dishes as per daily assignment.

- Receive and stock dry item from storeroom.

- Receive wine order and stock wine cellar.

- Clean wine cellars and fridges weekly.

- Set up tables in accordance with reservations.

- Assist with running of Food and Beverage, Clearing Food and Beverage items.

- Prepare tables by setting up linens, silverware, and glasses, lamps and cushions as per station assignment.

- Attend daily briefing before service.

- Ensure all condiments are refilled (salt and pepper shakers, pepper mill, sugar dishes, oil and vinegar and butter replenished in butter dishes at the end of the shift

- Fully reset tables with properly shined glasses, silverware and napkins. Tablecloths spread to Lyford Cay Club standard.

- Clean food and beverage trays.

- Collect and count linens.

- Reconcile wine by the bottle sales for the shift.

- Collect wine buckets and stands, at end of shift and secured in kitchen area.

- Have a complete understanding of the menu (food, liquor, beer and wine) in order to assist Members/guests in their selection.

- Make menu recommendations, answering questions and sharing additional information with guests, informing of daily specials.

- Take accurate food and drink orders using a POS ordering software.

- Liaise with kitchen/bar on progress of orders placed.

- Collect drinks from the Bar and serve wine.

- Collect food from the kitchen.

- Ensure that food is always the correct temperature at all times (hot/cold).

- Delivery of food to the appropriate Member/Guest in the correct order.

- Check in with assigned tables periodically to ensure a positive experience for guests.

- Maintain table cleanliness and bus tables.

- Present, deliver and close checks for Members and Guests at the end of the meal.
